Banana Pancakes



Banana Pancakes

In this house, we LOVE pancakes! There was a while when the first thing Anniston would ask for every single morning was pancakes (or as she calls them “can-cakes”)… In the past I’ve tried dozens of pancake recipes- both homemade and store-bought mixes, searching for a healthy alternative to this wonderful breakfast item.

I think I finally found the pancake recipe I’ve been searching for. Healthy banana pancakes- and they are 21 Day Fix approved! Not only that, but on 21-day fix, 1 pancake is considered a full yellow serving, but with these, you can eat 3 pancakes for ½ a yellow, ½ a red, and ½ purple serving- so you more bang for your buck, plus get fruit and protein in there too!

Oh did I mention they were delicious???




Ingredients
*Makes 6 pancakes.
Fix Portions (for 3 pancakes): 1/4 yellow, ½ red, 1 purple

·         2 eggs
·         1 banana
·        3/4 cup oats
·         ½  cup unsweetened applesauce (I use a 4oz applesauce cup)
·         1 tsp vanilla extract
·         1 tsp cinnamon

Directions
1.      Combine all ingredients in a blender and puree until smooth (about 30 seconds)
2.      Pour onto a lightly greased griddle or griddle pan (I use a very small amount of real, unsalted butter)
3.      Cook until lightly brown on both sides
4.      Drizzle with 1 tsp of 100% pure maple syrup (optional- my daughter eats them plain and loves them- I’ve made them 2 days in a row!)

Bonus
Add your favorite fruit (blueberries, strawberries, peaches, etc) or dark chocolate chips to the batter when the pancakes are on the griddle for an extra "sweet" start to your morning!

  1. These look awesome! But I think 3 pancakes would be a full purple serving since 1/2 a large banana is one purple and a full banana makes 6 pancakes

  3. I love the recipe, but confused about the count for yellow container as usually uncooked oats are 1 to 2 ration to cooked ones and yellow container should be measured cooked? wanna use this recipe but need to make sure it is correct:) Thank you

    1. Its a little tricky to figure out because the oats are never cooked, just blended into the batter, yet they need to be accounted for somehow, so I did my best to estimate :)... Based on your meal plan, feel free to adjust more or less oats as you need to- it will maintain the flavor, just the pancakes will be thicker or thinner depending on how much you add or take away. Hope that helps!

    1. No the maple syrup will go toward your sweetener count of 1-2tsp per day (see the coffee/tea bar page in your 21-day fix eating plan book for details on sweeteners)

    1. Oh that would be delicious! You can definitely add fruit (after the initial batter blending process of course) or even dark chocolate chips for a treat!

    2. Oh do you mean blueberries as the batter instead of bananas altogether? In which case, I would recommend leaving the bananas in there because I think removing them would affect the texture and sweetness. Hope that helps!

    1. The full recipe contains 2 servings. Split that in half for one serving and it's about 1 egg which equals 1/2 red :)

  9. No, because it makes 6 pancakes, and there is 3 pancakes per serving. So everything is half :)

  10. 2 eggs = 1 Red,
    3/4 cup of oats =1 1/2 yellow,
    1 banana = 2 purples and
    4oz. of applesauce (considering it as a fruit) = 1/2 purple,
    and that should be for all 6 pancakes.

  11. Made these this morning but had a hard time cooking them. I had my pan low and i would flip them once one side was almost a dark brown. and they still seemed doughy in the middle??? am I doing something wrong. Also I made them small they were not overly big or anything.

    1. The texture will be a little different than typical pancakes from the consistency of the banana... like more "mushy"...but as long as your griddle/pan is at the right temp and they brown on both sides, you should be fine! :)

    1. Syrup would count toward your sweetener allotment for the day (which is 1-2 tsp)

  16. What can you substitute Apple sauce with? Blueberries perhaps? No Apple sauce in the house.

    1. Applesauce is used here as a substitute for oil- mostly just there for consistency. You could probably eliminate it altogether and it would still turn out good!

  18. Have to tell you that I have been trying different recipes for the 21 day fix, and I absolutely love this one! I have been clean eating since October and am trying to venture out a little bit with recipes... love that this is only 1/4 yellow. I made 8 smaller pancakes (split into 4 obviously) so I could fool my mind into thinking I was eating more :) LOVE

  20. Thanks for posting! So yummy! I thought I would be turned off by the texture but it really was fine. The second time I made these, I was in a hurry and totally forgot the eggs! Oops. They still turned out alright though. :) My picky toddler and my husband both approve.

    1. I just use standard 100% whole grain oats- either the old fashioned or quick cooking will work for this recipe... with either one make sure they are uncooked ;)

    1. Glad they are a hit! I would use 1/4 cup or 1/3 cup of batter to make an ideal size pancake

    1. The applesauce is a sub for oil. You can always add coconut oil if you have that on hand in place of the applesauce :)

    1. Why does this question need to be asked? You could quadruple batch it and serve the whole family if you wanted - like any other food you make.

  34. I made these this morning and they were great! My kids and I all enjoyed them, and they're very filling! I added 1/2 tsp of baking powder - this helped a lot with the texture and made them more 'fluffy' - and a pinch of salt (up to a 1/4 tsp) made a big difference in the flavor.

  35. I must be in the minority here but we didn't like these. I think they were too much like oatmeal consistency and I'm not a big oatmeal fan. I would rather eat one regular pancake than three of these. Just my opinion.
