"Summertime Strawberry Salsa"


The ladies from our community group got together last night for dinner and dessert. Our main course was balsamic grilled chicken and I prepared a strawberry salsa to go along with it. I had made grilled chicken with this strawberry salsa a week or so ago for dinner one night, so I knew it would pair wonderfully for our ladies dinner too. Its also great on pita chips, as we discovered last night! I think it would be excellent with fish as well- tilapia, salmon, etc. Anyways, I had a lot of requests for the recipe, so I thought I’d share it here too. Easy, refreshing, and perfect for spring or summertime!
 
Ingredients:
·         1 package (16oz) fresh strawberries, chopped
·         1 fresh jalapeno, finely chopped (remove ribs and seeds)
·         1 small cucumber (or ½ large cucumber), peeled and chopped (cut it in such a way to exclude all seeds)
·         ½ small sweet onion, chopped
·         About 1 tbsp fresh cilantro, finely chopped (just eyeball it- you can always add more later to taste)
·         Drizzle honey (again, just eyeball it and add more later if needed)
·         Sprinkle of salt and pepper, to taste

Directions:
1.      Combine all ingredients in mixing bowl and stir thoroughly
2.      Let rest in refrigerator at least 30 minutes for the flavors to marry
3.      Adjust seasonings if needed and serve
