Whole Wheat Banana Muffins

Third time’s a charm right?


I've redone this recipe 3 times now in the past year as I've progressed in my journey to a healthier me. The original muffin recipe I shared on this blog back in 2013 included sour cream, cream cheese, white sugar, and white flour. I tried to get healthier around the start of the new year on my own, and made a few modifications to this recipe then. Now, after being involved in Beachbody programs and educating myself further on healthy, clean eating, I decided to revamp this recipe once again, and I think it turned out great.


Yield: 2 Dozen
Serving Size: 1 Muffin
21 Day Fix Portion (per muffin): 1 Yellow


Ingredients:
  • ½ cup honey
  • 1 stick organic, unsalted butter, softened
  • 2 eggs
  • 3- 4 bananas
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 tbsp plain, nonfat greek yogurt
  • 1 cup white whole wheat flour (I found this at Walmart. Gold Medal brand)


Directions
1.      Preheat oven to 350
2.      Cream butter, honey, and eggs
3.      Mash bananas and beat into mixture
4.      In a separate bowl, stir baking soda and salt into greek yogurt (as you stir, it might fizz a little and turn into the consistency of mousse)
5.      Add greek yogurt mixture into muffin batter and mix well.
6.      Gradually add in flour. Stir until completely blended.
7.      Line 2 muffin trays with paper cupcake/muffin liners (to make 24 muffins total)
8.      Spoon in batter (about 2/3 full- I use an ice cream scooper for easy and even filling)
9.      Bake for 20-25 minutes
10.  Cool before enjoying

  4. Are we allowed to have butter on the 21 day fix?

    1. Butter is not listed in the official 21-day fix eating plan book, so when I did the 21-day fix, I didn't have any butter for those 3 weeks. However, Autumn Calabrese herself eats and recommends organic unsalted butter (in moderation of course), so I've started to incorporate small amounts here and there. Organic unsalted butter is also considered a "clean" food which is the premise of 21-day fix. My guess why its not in the eating plan is because of the higher caloric content. Anyways, all this to say, you could substitute an equal amount of coconut oil (1/2 cup) for the butter in this recipe and it should turn out just as delicious! :)

    2. Why does it count as a yellow container and not purple? I thought bananas were considered purple.

    3. I am considering it a yellow substitute/treat they have in explained in the eating plan book- I think its the best way to account for all the ingredients like honey, butter, and yogurt too. But, if you were to eat an actual banana itself, 1/2 banana would be 1 purple serving. Hope that helps!

  5. How much is a stick of butter and I couldn't find the flour you said to use will it still work out with normal flour ?

    1. A stick of butter should be 1/2 cup.

      While the recipe would bake fine with regular white flour, I wouldn't recommend it because its white, enriched flour which is not part of the 21 day fix program nor considered a "clean" food product. Try just regular WHOLE WHEAT flour instead- that should be easier to find. Its in almost every grocery store and almost all brands, including store brands.

  6. How is white whole wheat flour different from whole wheat flour? What is white whole wheat flour?

    1. White whole wheat flour is a whole wheat flour, just a finer, less grainy, less dense texture so it mimics the consistency and flavor of plain white all purpose flour with the nutritional benefit of a whole grain flour. You can use either in this recipe! I found the white whole wheat at walmart (Gold Medal brand) but regular whole wheat is usually easier to find in just about any store

  7. Are those mini muffins or regular sized muffins?

  8. Mine didn't turn out. Not sure what I missed. I followed the recipe. When I opened the oven all of the liquid was on top of the done muffins. I also could only get this to make 12 muffins, not 24.

  9. hi, i made this and they are delicious, thank you honeybee homemaker, just one question, i don't get 24 muffin are yours mini-muffin, because i only get 12.??

  10. I substitute the coconut oil for the butter and my kids LOVE them. They gobble them up every time.
