21-Day Fix: Day 2, Headed to the Teens Already!

DAY 2 WORKOUT: UPPER BODY FIX 


After an intense cardio session yesterday, this one sounded easy. Haha, not so much. I got really frustrated at the beginning because I was having trouble figuring out which resistance band to use for what exercise and kept having to adjust the band. You have the option to use weights or bands, and since we have bands leftover from P90x, I thought I’d just use those. However, I might be going to the store for weights. The bands were more difficult to maneuver and I got band burn on my arm. Match that with the rug burn on my elbows from planks (those are SO hard) and on my back from scissor crunches, I might also be purchasing a yoga mat. Our hardwood floor/area rug combo is not my friend right now.

One a positive note, no throwing up today- yay!

DAY 2: FOOD REVIEW

Much improved breakfast today. I mixed egg whites with feta cheese and sautéed organic spinach (wilted down with garlic powder and nutmeg). I’ve made this before and I knew it’s delicious, so this was a winner right away. I also had a whole wheat deli round with a teaspoon of peanut butter and a teaspoon of organic agave nectar, along with half a purple container of strawberries and about 1/3 a banana (because Anniston ate the rest of my fruit). This was a fabulous, well-rounded breakfast that gave me great energy for my workout and kept me full until mid-afternoon when I had my shakeology. 


For today’s Shakeology, I was excited to try a fancy recipe- peppermint mocha! 1 scoop shakeology + 1 coffee + crushed ice + 1 tsp peppermint extract. Y’all it was like pouring Listerine down my throat. The proportion of peppermint extract was WAYYYYYYY too much. It overpowered the entire drink and burned to take a small sip. I double-checked the recipe to make sure I hadn’t read it wrong and it definitely said 1 tsp peppermint extract. I had to dump the entire thing down the drain (bye bye $4) and start over. This time I eliminated the peppermint extract (because it literally left a bad taste in my mouth) and just did coffee, ice, and shakeology. Much better. Also the texture and temperature issues from yesterday were definitely resolved, as I had expected, by using a blender. Thinking I might try a fruit or peanut butter mixture of some sort tomorrow. I made a chocolate-strawberry shakeology for Josh after his workout tonight and literally wanted to lick the blender clean- it was like a Neapolitan milkshake- amazing.

Another note on shakeology, I used a full scoop today. Yesterday, the full scoop looked like too much, so I only did half, but was hungry an hour later. The full scoop was much more satisfying and kept me content longer.

Around 4:30 I made a side salad with spinach, strawberries, and the homemade balsamic vinaigrette from the recipe book. Although I was really jealous of the Teddy Grahams Anniston was eating, my salad was surprisingly delicious.

Dinner turned out great too. I made an adapted version of a rosemary-garlic chicken I’ve made before. Despite eliminating the pancetta and salt from the original recipe, it was very flavorful. It was accompanied by a garlic-baked broccoli recipe I found on Pinterest. Josh hates broccoli and thought it was great.

So, the day is ending and I have one yellow and one red remaining. My plan was to have a whey protein shake (whey = red, almond milk = yellow substitute) before bed, but I’m seriously contemplating making 1 whole wheat pancake (yellow) with a teaspoon of pure maple syrup. Hmm, decisions, decisions.

OTHER THOUGHTS

I never fully finished my preparation on Sunday night (crazy weekend), so I have found myself prepping (i.e. chopping and measuring) and planning every night for the day ahead. Its taking little more time than I wished, and I’ve made quite a mess in the kitchen, but Josh has been a champ with the dishes!

From a cooking perspective, 2 teaspoons of extra virgin olive oil a day doesn’t seem very realistic. Not that I’m drowning things in EVOO, but how do you cook chicken, vegetables, eggs, etc. without something to prevent your food from burning and/or sticking to your pans?? I can’t use cooking spray, nor real unsalted butter, so I think EVOO is the best option, but I’m struggling to limit that to 2 teaspoons. Anyone have an idea or advice here?
