Jambalaya

I found this recipe on my computer I had written nearly a year ago for 21-Day Fix but never posted it- aahhh! So I made it the other night for dinner and figured now would be a good time to share it with you- Better late than never, right? :)


I personally love this recipe because it gives you tons of flavor- who says eating right has to be bland?!? Plus, you can customize it to your liking- you can choose the proteins and control the heat level. And, everything cooks in ONE pan, so it makes for easy clean-up!


This one is definitely going back on our regular meal rotation now that I’ve rediscovered it! Hope y’all enjoy it too.

Jambalaya



Yield: 4-6 servings
21 Day Fix Portions (per serving): 1 yellow, 1 red, 1 green


Ingredients
  • 1, 8-oz package of  Uncle Ben’s Whole Grain Brown Ready Rice (You can use regular brown rice too- I just like that this cooks in 90 seconds)
  • 4 red containers protein of choice (mix-and-match as desired): diced chicken breast, shrimp, and/or all-natural turkey or pork sausage)
  • 1½ green container (1½ cup) bell pepper (any color), diced
  • 1½ green container  (1½ cup) fire roasted diced tomatoes
  • 1 green container (1 cup) onion, chopped
  • 3 garlic cloves, minced (or grated)
  • Original hot sauce (to taste)
  • Dash of Worcestershire sauce (I recommend Lea & Perrins becuase its all natural ingredients and not made with corn syrup- read your labels!)
  • 2 tbsp pre-made or homemade cajun seasoning (2 tsp each garlic powder, onion powder, paprika, dried thyme, black pepper, cayenne pepper, plus ½ tsp salt)


Directions

  1. In a saute pan, brown protein over medium-high heat (I would do sausage first, then chicken, then shrimp). Be sure to season the chicken and shrimp with cajun seasoning. *You might need to add a little Extra Virgin Olive Oil to your pan in between meats*. Remove proteins from pan and place in a bowl and cover with foil to keep warm
  2. In the same pan, drizzle a little more EVOO and reduce heat to medium/medium-low. Saute onions, peppers, and garlic until tender. Season with hot sauce as desired.
  3. Add the tomatoes into the pan and allow the tomatoes to heat through.
  4. Cook the rice according to package instructions, then add it to the pan.
  5. Add the cooked protein back to the pan as well
  6. Give it a good stir so that everything is evenly combined. Add more hot sauce and worcestershire to taste.
  7. Use a GREEN container (or 1 cup) to scoop out each portion

  1. Hello there! My name is Kim and I have to say how much I LOVE your site! The recipes are fantastic!! Thank you so much for sharing. Question though, I just made the jambalaya. It says to measure out in green container for the portion and makes 4 servings. I have WAY more than 4 servings? I followed the recipe exactly and seems like a lot more. Is it two green containers as a serving? Or should I just make as many servings I can with the green containers and maybe end up with more than 4 servings.

    1. So glad you like the recipes! Definitely keep your portion to just one green container... the 4 servings was an estimate on my part because I forgot to actually measure them all when I made this, so I could have easily underestimated how much it made :)... how many total servings did you end up with?

    2. Hello :) I ended up with 5 LOL!! It looks like SOO much food until I started measuring. I always wondered about how people come up with the portion sizes. I love that you instruct us on what container to use!

  3. This recipe looks great! I am new to the Fix plans so please pardon my ignorance. If the serving size is 1 green container, how can it be 1 yellow, 1 red, 1 green serving as listed near the title? Additionally, I see that you have 1.5 green containers listed as 1.5 cups. However, my understanding is the green container is 1.25 cups, which 1.5 times would be 1 and 7/8 cups. Could you please help clarify my understanding?

    1. Look in the back of your Eating Plan book- page 70-something it should be...I don't have mine with me at the moment :)... Anyways there is a page on combination dishes- like lasanga, soups, casseroles, etc. Because Jambalaya is a mixed dish you would treat it the same way as directed on this page when counting and portioning your servings- you use a green container to measure it onto your plate so that you maintain portion control, but you check off your colors based on what that dish contains. Does that make sense?

      I have the original version of the 21-day containers and my green measures right about 1 cup...Maybe they have increased the size slightly with the newer kits? My advice would be to use the containers you received to measure your ingredients- I just try to share the cup size equivalents for those that want to make my recipes but don't have the 21 day fix containers :)

    My name is Angela Davis Couling. I am a newcomer to the 21 Day Fix Program.

    When I first started the program, I did the same thing so many others did and created a Pinterest page for all of my Fix-approved recipes. Unfortunately I quickly discovered the difficulty of using this method. It required a great deal of clicking and searching to try and figure out which recipes could be made with which containers. It turned out to be a very inefficient way of doing things.

    So I decided I would like to create a website that brought together all of the 21 Day Fix-approved recipes that are out there in an easy-to-navigate fashion. This website would boldly and easily feature exactly what containers are used for which recipes and allow for readers to find recipes by specific colors (ie: being able to click on a link that says "red container" in order to bring up all of the recipes that use the red container).

    I was wondering if I may have your permission to feature your recipes and images on my website.

    My plan is to use an image from your site and place a color code above it with the corresponding containers. Once readers click on that image it will take them to a post with the recipe listed and full credit for the photography and ownership of the recipe given to you, including a link directly back to your site.

    I would also love to incorporate a brief "about this author" blurb at the end of the recipe so that readers can learn a little bit more about you and your site, hopefully driving more traffic back to you.

    After I have created these recipe entries into the index, I will send a link of them to you for approval. Anything you wish to be changed/added will be done immediately!

    I am not (nor do I intend to be) a BeachBody Coach. My full intention with this project is to give 21 Day Fixers a powerful resource that will allow for them to easily create their weekly meal plans, hopefully cutting down on frustration and drop-outs.
